Driven to help others eat right and live healthy, Elyse Kopecky is a 2-time New York
Times best-selling cookbook author, educator, and inspirational speaker. She co-
authored Run Fast. Eat Slow. and Run Fast. Cook Fast. Eat Slow. with 4-time Olympian
and NYC Marathon Champion, Shalane Flanagan. She is currently writing her third book,
Rise and Run (Fall 2021 Penguin Random House). Elyse is also a mom and avid trail
runner which inspires her passion to fuel others and the future through enriching food.
Elyse’s work has been featured in Women’s Health, Runners World, Outside Magazine,
Sports Illustrated, People, and ESPN and on Good Morning America, TODAY, CBS, and
NBC news. She writes a monthly column for Women’s Running Magazine and is a
Saucony ambassador. She loves teaching cooking classes both online and at events.
Elyse lives in Bend, Oregon with her husband and two adventurous kids.
Elyse ran cross-country and track at UNC Chapel Hill, and after graduation moved west
to Portland, OR, to work for Nike Running. Elyse’s career eventually took her abroad,
during which time she took cooking classes throughout Europe, Africa, and Asia. Armed
with amazing recipes from around the world, she began cooking from scratch to fuel her
athletic endeavors. She discovered that by incorporating more fats into her diet she was
stronger, healthier, and happier than ever before. She quit a successful marketing
career of 10 years for the chance to help others eat right and moved to NYC to study at
the Natural Gourmet Institute for Health & Culinary Arts.
